Butternut Squash Soup (AIP, Paleo)

Squash is polarizing in my house. I love it all ways. My husband loves it some ways. My kids don't love it any way.
So squash - a key staple for AIP and Paleo - is a bit of a struggle in our family. But I still make it because at the end of the day, I need to stay nourished too!
To make this a complete meal, serve with shredded or cubed meat, and a fresh salad.
Ingredients:
1 large butternut squash, de-seeded, de-skinned and cut into 1" cubes
1 can coconut milk
2 apples or pear, de-seeded and de-skinned, cut into cubes
1 Tbsp turmeric
1 tsp cinnamon
1/2 tsp sea salt
1 cup cilantro, chopped for garnish
Preparation:
Place all ingredients but the cilantro into a slow cooker. Cook on low for 4 - 6 hours, until squash is tender with a fork.
Blend until smooth with a hand blender, or high powered blender.
Garnish with fresh cilantro.
