I love this recipe - it takes all of 5 minutes to prepare (not including time in the oven). And it's grain-free! I'm not sure where it originates from. A colleague gave me the recipe as her go-to bread alternative. It's delicious and easy.
I cup blanched ground almond flour
3/4 cup ground flax seeds
1/2 tsp salt
1/2 tsp baking powder
4 large eggs
1 Tbsp extra virgin olive oil
2 Tbsp caraway seeds or herbs-de-provence (NOT BOTH)
Preheat oven to 350F and grease a small loaf pan with coconut oil. I typically grease the sides and use parchment paper on the bottom.
Mix dry ingredients together in a large bowl.
In a separate bowl, mix together eggs and olive oil.
Mix wet ingredients into dry ingredients. Stir in herbs.
Pour mixture into loaf pan.
Bake in oven for 30-40 minutes or until toothpick comes out clean.
