Grain Free Chocolate Chip Cookies


Our family is slowly migrating towards a paleo lifestyle for health reasons. One of the biggest challenges are "treats" - no sugar or grains is hard for kids.


My daughter would not go without. So, for her own survival, she tweaked a recipe from "The World's Easiest Paleo Baking" recipe book to make it her own.


Although this cookies are gluten free, grain free and dairy free, they are NOT free of flavour.


They are light, fluffy, not too coconut tasting and absolutely delicious! It passed a massive taste test poolside this past weekend. Kids and parents alike gave thumbs up. I hope you enjoy them!


Ingredients

  • 1/3 cup almond flour

  • 1/8 cup coconut flour

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/4 cup coconut oil, solid (not melted)

  • 1/2 cup sugar substitute (we have used both monk fruit and stevia baking powders)

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/2 cup stevia chocolate chips, or dairy-free chocolate chips

Preparation

  • Preheat oven to 350F and line cookie sheet with parchment paper.

  • Whisk all dry ingredients together in a small bowl (almond flour, coconut flour, baking powder, salt).

  • Using a hand blender, beat all wet ingredients together until light (about two minutes).

  • Add the dry ingredients to the wet bowl with a wooden spoon. Mix until dough holds together. Then add chocolate chips.

  • Drop dough onto the sheet (heaping teaspoon), allowing two inches of space for spreading.

  • Bake about 10 minutes, until cookies are set and golden brown.

  • Allow cookies to cool about five minutes before transferring to a wire rack.
