Strawberry Ice Cream

As you shift back into a healthier routine with the start of September, consider this two-ingredient, dairy free ice cream recipe. It will satisfy sweet cravings and fill you with fibre! There are some options below, so keep reading.


Serves 2-4

Ingredients

  • 2 ripe bananas (sliced and frozen)

  • 1 cup frozen strawberries

Preparation

  • Add frozen bananas and strawberries to food processor and blend. Occasionally scrape down the sides and continue to blend until smooth (approximately 3 to 5 minutes).

  • Scoop into a bowl and enjoy immediately as soft serve or for firmer ice cream, place in an airtight, freezer-safe container and freeze for at least 1 hour before scooping.

Options:

  • Substitute strawberries with frozen peach or blueberries.

  • Substitute berries with a scoop of almond butter and cocoa for a chunky monkey version.

  • Add a little lemon, mint and sprinkle with hemp hearts for a more sophisticated version.
