There have been lots of experiments at home this summer. As we sorted out some family health issues, we've experimented with all sorts of paleo and dairy free recipes.
This one is for me. I love yogurt. Oh how I miss the creamy cold consistency mixed with a bowl full of blueberries.
But diary makes me itch and eczema appears within a day (sometimes hours) of eating dairy. So here is a recipe that I'm experimenting and tweaking. If you love yogurt, but it doesn't love you, give it a try!
Fermenting food is not an exact science. If this doesn’t work out as you’d like it to, try different brands of coconut milk and/or probiotics.
2 cans full fat coconut yogurt
2 probiotic capsule (25 billion)
Open the probiotic capsules and empty contents into the blender. Blend with coconut milk.
Transfer to a sanitized glass jar (make sure it’s not still hot - you don’t want those probiotics to die).
Store it in a dark, warm place for 24-48 hours (like a kitchen cupboard). If it's not thick enough for you, you can let it ferment for another 24 hours.
Add your favourite yogurt toppings, and store the rest for up to a week in the fridge.
Top with your favourite flavours - I like ground cinnamon, berries and hemp hearts. Serve & enjoy!
